I expected Tex-Mex. What I got was something entirely different—something special. This wasn’t just another Mexican food stop in Texas. This was the kind of food that makes you feel like you’re sitting at your auntie’s house, surrounded by the aromas of generations’ worth of family recipes. If you know, you know. You know the taste of comfort, of warmth, of pure, unfiltered soul in every bite.


A Family-Run, Woman-Owned Treasure

Owned by Zaira Carlos and operated with love by a mom-and-daughter duo, LaJefa is more than just a food truck—it’s a family legacy on wheels. From the moment we arrived, we were treated with warmth and hospitality, setting the stage for an unforgettable meal.


The Feast: Birria, Street Tacos & Ramen Like No Other

Zaira served us an array of dishes, each one outdoing the last.


Birria Tacos + Broth

Let’s start with the birria tacos—corn tortillas stuffed with tender, flavor-packed meat, every bite a testament to the love and care put into each dish. I’ve had my fair share of birria tacos across Texas, but these? Hands down, one of the best. And that broth? I wanted to bottle it up and take it home. Instead, I drenched my taco in it, savoring every drop. Pure, comforting bliss.


Street Birria Taco + Broth (Secret Menu Alert!)

Next up, a surprise from the secret menu: the street birria taco. Double corn tortilla, crispy cheese crust, beef birria, peruano pot beans, onions, pickled lime, cilantro, and salsa verde. Baby! Baby! Baby! This was next-level. My best friend and I have tasted street tacos from Texas to California and at The Texas Taco Festival in Dallas, Texas, but these? Untouchable. The flavors hit just right—so much so that I forgot about the broth. Even my husband, who usually avoids onions at all costs, was all in. That’s how good these tacos were.


Birria Ramen: The Grand Finale

Our last dish was the birria ramen, and let me tell you—it was a masterpiece. The broth, the meat, the perfectly cooked noodles… chef’s kiss. It was so delicious that even the little one couldn’t stop slurping it up. I only wished we had room to try more.

Zaira is a powerhouse. She wears many hats and has created something truly special with LaJefa that is located in downtown Brenham, Texas. This isn’t just a food truck—it’s a love letter to homemade, heartfelt cooking. The flavors, the hospitality, the family-run atmosphere—it all comes together to create something magical.
